Suggest a better description1. Peel and finely chop garlic. Melt 1 TBSP butter in a small pot over medium-high heat. Add garlic; cook until fragrant, 30 seconds. Stir in rice, 1¼ cups water (2¼ cups for 4), and a pinch of salt. Bring to a boil, then cover and reduce heat to low. Cook until rice is tender, 15-20 minutes. Keep covered off heat until ready to serve.
2. Pat pork dry with paper towels. Place between two pieces of plastic wrap, then pound with a mallet or heavy-bottomed pan until ? inch thick. Season all over with salt and pepper. In a shallow dish, combine panko and a big pinch of salt and pepper. Brush a thin layer of sour cream onto both sides of pork. Working one piece at a time, press pork into panko mixture, coating all over.
3. Heat a ?-inch layer of oil in a large, preferably nonstick, pan over medium-high heat. Once oil is hot enough that a pinch of panko sizzles when added to the pan, add coated pork. Cook until panko is golden brown and pork is cooked through, 2-4 minutes per side. (For 4 servings, cook in batches.) Transfer to a paper-towel-lined plate and season with salt.
4. While pork cooks, place katsu sauce in a small microwave-safe bowl; microwave until warm, 20 seconds. Fluff rice with a fork and season with salt. Thinly slice pork crosswise. Top pork with as much katsu sauce as you’d like. Drizzle with sriracha if you like things spicy.
