(Brown/White sugar is actually brown sugar in its white version, so its like brown sugar but then white)
Cut the vanilla pod through the middle en put it together with the milk and cream in a pan. Turn on the heat at max. 60?
The heat is important because the vanilla has to mix itself slowly in to the brew.
In the meanwhile, split the eggs and put the eggyolks in a bowl. Add the sugar to the eggs and mix it with a blender or by hand untill it turns a bit light in colour.
Heat the oven at 120?
After +/- 15 minutes cooking, pick the vanilla pods out of the cream (you will see some vanilla swimming in the cream), and scrape the marrow of the vanilla with the backend of a knife. Add this to the cream and give it some time to cool down under 50? (best you can do is turn off the heat and keep the pan on the cooker.
Mix the cream together with eggyolks. Dont mix it too hard, because you wouldn't like to get air in to the brew.
Pour the brew in small baking pans and place these au-bain-marie in the oven.
Bake the cr?me between 30-60 minutes untill it gains a gold colour on top, the brew should be trembling. Dont worry if the top gains a light brown colour. Get the baking pan out of the oven and let them rest about 10 minutes and place them in the refridgerator for about 2 hours.The longer it cools, the better its taste will be (in my opinion).
Now, to get that caramel layer on top of the creme brulee, just add some brown sugar (or any other light sugar) on top of the creme en divide it. Use a kitchen torch to burn the sugar in to caramel.
