This is an easy way to have a hot breakfast ready for New Year's Day. Assemble it before you head out for New Year's Eve festivities, start it cooking when you go to bed, and it's ready when you wake up!
1. Place a layer of frozen potatoes on the bottom of the crock pot, followed by a layer of meat, then onions, peppers, and cheese.
2. Repeat the layering process two or three more times, ending with a layer on cheese on top.
3. Beat the eggs, milk, salt and pepper together, pour over the crock pot mixture.
4. Cook on LOW for 10 hours.
