This rich and creamy chowder is a simple one pot wonder. Everything in the crock and it's ready when you get home from work.
Cut bacon into match stick shaped pieces cutting slices into strips. Cook bacon in a skillet over medium low heat until all fat is rendered off and bacon is crisp. Remove bacon, set aside to cool and drain off bacon fat to a seperate dish. Turn heat to medium high, return three tablespoons bacon fat to skillet and let skillet heat up. Pat chicken thighs dry with a paper towel, season liberally with salt and pepper and sear on all sides in skillet. Cook three thighs at a time, adding bacon fat to skillet as needed. Place seared thighs on a plate to cool. Once cooled, cut into cubes and place into crock pot.
Add all other ingredients except for the whipping cream, corn starch, parsley and cooked bacon. Mix well.
Cook on high for 4 hours or on low for 8 hours.
In small bowl, beat whipping cream and cornstarch with whisk until smooth. Stir into mixture in slow cooker. Add cooked bacon at this time. Cover; cook 15 minutes longer.
Season chowder with salt and pepper and top with chopped parsley. Serve with day old french bread and a hearty stout.
The flavor of this chowder comes from the seared chicken thighs. All you need is a good sear on your thighs to inpart the most flavor in this chowder. Crusty day old bread is best to soak up the delicious liquid in this chowder. Enjoy!
