1. Peel and shred the sweet potatoes. Place in the bottom of a slow cooker.
2. Add the diced bell pepper, onion, and jalapeno.
3. chop the sausage into bite sized pieces and add to the cooker.
4. Cover and cook on low for 6-8 hours.
If prefered, cook on the stovetop with a little coconut oil in the bottom of a large skillet.
