Place the peas in a large pot or bowl, cover with water by 2 inches and soak 8 hours or overnight, drain and set aside.
Place ham hock, peas and all the ingredients into a crock pot and cook on high for 4-6 hours. Remove the bay leaf and ham hock. Remove fat and chop ham and return to crock pot and stir. Adjust seasoning to taste. Serve immediately
