Brown onion and garlic. Add beef and stir fry until no longer pink. Put mixture into crockpot.
Add remaining ingredients to beef mixture in the pot. Stir, cover and cook on high for 3-4 hours or low for 6-8 hours.
Add up to 1 cup of water if it's too thick (as needed).
This recipe should make 4 healthy sized portions, and you can easily double it. I serve it with grated cheddar cheese & over white rice.
