Empty contents of onion soup mix envelope into plastic bag.
Add beef broth; seal and shake to mix.
Add brisket to freezer bag and seal.
Place beef in crockpot. Pour broth/soup mixture over meat.
Cover and cook on low heat setting 8-10 hours or until beef is tender.
Skim fat from liquid, Remove beef.
Cut across grain into thin slices.
Slice each roll in half. Fill with meat, and serve with broth for dipping.
