Clear broth soup made in the crockpot

Rough chop Vegetables. No need to cut small. They are all being scooped out at the end.
Add first five ingredients to the crock pot. Add the whites of the green onions.
Cook on low for 4-5 hours or on high for 2-4.
An hour before serving, remove the vegetables from the pot. Salt and pepper to taste.
Add the mushrooms and green onion tops.
Cover and let cook for another hour, until the mushrooms are tender.
