This mashed bean dish is easy, delicious and nutritious. Use as a simple side dish, or add salsa, make bean burros, put in tacos, or fry it with eggs. Healthy, low cal and high fiber! And the crockpot does all the work.
Pour one cup of beans at a time onto clean counter or platter and sort for rocks & debris. Put all beans in a colander and rinse well. Put in crockpot with water. Plug crockpot into a timer for greatest convenience (available at hardware stores). Cook on high for 7 hours. When done, top layer of beans will be above water, so press down gently into liquid with a potato masher and let set for 10 minutes. Sprinkle with 1 tsp salt and grated cheese. Mix and mash to desired consistency and serve fresh or reheated. Keeps in fridge up to 10 days. If beans are too watery at first, remove 1/2 cup liquid before mashing. You may need to add a little water later as they tend to solidify.
