Heat oil in large pot.
Add shallots,garlic,carrots and celery.
Saute until shallots are softened and lightly browned,about 3-4 minutes.
Add ground turkey and saute til browned and cooked through.
Add chili pwder,cumin,coriander,oregano and musturd and stir well for a minute or two.
Add tomatoes and salt to taste.
Pour mixture into crockpot(slowcooker) and add lentils and 6 cups of vegetable broth.
Cook on low for 4-6 hours.
Add more broth as needed to achieve desired consistency
This chili is not very spicy so you can add a lil cayenne or chipotle powder for a lil added kick! You can also garnish with plain greek yogurt or sour cream and a lil cilantro or parsley! :-)
