Place the bay leaf, salt, margarine, sugar, bell pepper, celery & onion in a crockpot.
Core the tomatoes. Place them in boiling water for about 15 to 20 seconds, then into ice water to cool quickly. Peel the tomatoes.
Place the prepared tomatoes on top of the other ingredients in the crockpot. Cover & cook on LOW for 8 to 9 hours.
Remove the bay leaf.. Sprinkle the top with parsley, if desired/
Serve as a side dish or freeze in portions for soups or other recipes.
