This is a favorite of mine. It's quick and easy to fix and tastes a lot like Deviled Eggs. Just right for two people but can easily be doubled. Aluminum foil can be put on top of hot dogs if you prefer not to have the blackened tips. Without foil they have the taste of being roasted over an open fire.
Prepare mashed potatoes as normal.
Stir in relish, Mayonnaise, onion, and mustard.
Pour into 1 quart casserole dish.
Slice hot dogs lengthwise and insert upright around edge of casserole just to top of dish.
If end of hot dogs need to be trimmed to fit, place trimmed pieces on top of casserole.
Sprinkle with paprika .
Bake in preheated oven at 350 degrees for 25 to 30 minutes.
I use the plump hot dogs to give a more uniform look
