Preheat oven to 425 degrees. Line a flat baking sheet with foil and spray generously with non-stick spray.
Coat the chicken in mayo, shake off excess for a thin coating. Dredge in crumb mixture, gently pressing into the chicken so it sticks and covers well. Lay the chicken out flat on the prepared sheet. Bake approx 25 minutes, turning once, until cooked through and slightly browned.
I like to serve this with some honey mustard and BBQ sauce for dipping.
