Preheat oven to 275 degrees.
Combine oats & pecans in large bowl.
Combine brown sugar & water in smaller microwave safe bowl.
Microwave for 1 minute or so until sugar is dissolved.
Add vanilla & salt to brown sugar mixture. Stir thoroughly.
Pour mixture over oats & pecans.
Stir until well combined.
Pour into jelly roll pan.
Cook 50 to 70 minutes, depending on how crunchy you like your granola. We bake ours 70 minutes.
