1. Preheat the oven to 350 degrees. Place oats, bran, pistachios, macadamias, pecans, dried apples and dried apricots in a bowl and mix to combine.
2. Place maple syrup and vanilla in a small pan and cook over low heat for 3 minutes or until syrup becomes runny and easy to pour.
3. Pour maple syrup over oat mixture and toss lightly to coat. Divide mixture between two non-stick baking dishes. Bake for 20 minutes or until the muesli is lightly toasted, turning frequently. Allow mixture to cool before transferring to an airtight container.
