This is a traditional dish from the northern State of Nuevo Leon. Tasty and great for a weekday dinner.
Lamb can be used instead of goat.
The goat can be made one day ahead.
• Season the pieces of goat with salt and pepper. Smear the Acapulco paste all over the meat. Arrange in a large non-reactive container, cover tightly with plastic wrap, and refrigerate overnight. Remove from fridge 2 hours before cooking to let the meat come to room temperature.
• Preheat oven to 325F. In a medium roasting pan, place half the avocado leaves across the bottom of the pan and then add the meat on top. Distribute the rest of the leaves over the meat. Cover the pan with its lid or wrap tightly with tin foil. Bake for 3 hours until meat is almost falling apart. Shred the goat meat and remove the avocado leaves. Set aside.
• Meanwhile, in a large sauce pan, warm up the tortillas. Spread a heaping spoonful of the goat along the middle of each tortilla. Roll tortilla tightly around the filling and secure with a toothpick. Repeat until you have done all tacos.
• Heat the oil in the same sauce pan over high heat. Add the tacos, one by one, in the hot oil and cook all sides until golden brown. Remove to a paper towel-lined plate.
• Serve with the tomatoes, onion and avocados on the side. Provecho!
