1. Dissolve yeast in warm water. Add sugar, oil, and cottage cheese (heated to lukewarm), and salt. Add 3-1/2 cups flour and beat 3 minutes by mixer or hand; add 2-1/2 or 3 cups more flour, mix well.
2. Turn out on floured surface and knead until smooth and pliable. In oiled bowl (covered with a damp cloth), allow to rise until about doubled in volume. Divide into two loaves; place each loaf in a greased 2-quart pan, and let rise again (unclear how much/long; maybe 45 minutes).
3. Bake at 350 for 45-60 minutes -- loaf will pull away from side of pan. Remove to cooling rack; butter crust well, and salt with plain or flavored (onion, garlic, celery) salt. Crust can be covered while it cools.
