1. Drain peaches, reserve syrup, arrange in greased 8 inch square pan. Combine 1/4 cup reserved syrup, lemon juice and rind and extract, sprinkle over peaches. Heat in oven while preparing short cake. Sift dry ingredients into bowl, stir in shortening, egg, 1/3 cup peach syrup. Stir until dry ingredients are moistened. Drop dough from tablespoon over mixture and spread with spatula. Sprinkle with 2 T additional sugar. Bake at 350 degrees for 30 minutes.
