Suggest a better descriptionUsing cast iron or other flat griddle roast tomatoes & chiles on medium heat, turning each frequently to develop an even
char all over. Garlic should be lightly roasted on the griddle, not charred.
Place roasted tomatoes/chiles/garlic in a bowl that has been lined with a dish towel. use ends of dish towel to
cover the top of the veggies. Leave them this way for approx. 30 minutes. This allows the veggies to sweat and makes
them easier to peel. After this, use a knife to lightly scrape or peel off as much of the outer skin of the tomatoes and chiles
as possible.
Use small chopper or by hand to chop chiles and garlic. For best results on the tomatoes, chop them into quarters and
place them in a blender. Pulse to liquefy slightly.
Now pour tomatoes into a bowl with the diced chiles & garlic. Dice up your onion and chop up your cilantro. Add to the bowl.
Sprinkle with the lime juice and salt. Stir up to mix, and its ready! Best served the next day, but immediately is fine.
Store in the refrigerator.
(You can add some of the salsa to chopped avocados to make an avocado dip . . . ratio is up to your taste.)
