Wash beans. (unless using canned) (((( No Alex, soap is NOT required!!! Wash beans is just to rinse several times real good!! LOL)
If using uncooked beans, place in pot with water to soak for 5 hours at least. Add oregano, cumin, salt, pepper, and bay leaf to the pot.
Dice onion, add garlic and red peppers. Cook in skillet with olive oil until translucent. Put cooked items from skillet into pot of beans and boil for 5 minutes.
Finish cooking on low-medium (about 4) heat for an hour. Check now and then to be water does not evaporate.... add some water but only if you MUST.

P.S. You may certainly add extra crushed red peppers or dice up a jalapeno or habenero, or such if you and your family like to "spice" it up a little. I keep things pretty tame in our home.
These beans are great just as a side dish. Try them with my cheesy tortillas.... delicious!
