This is a very tasty and simple tomato-based shrimp dish to make, usually served over white rice.
In a small bowl, whisk the tomato sauce, salt, oregano and cumin, and set aside.
To make the "sofrito", heat the olive oil in a large skillet over medium-high heat until just fragrant. Add the onions and cook 1 to 2 minutes. Then add the garlic and green pepper. Stirring, cook for an additional 1-2 minutes or until the onions are translucent. Deglaze the sofrito by adding the wine, stirring gently. Add the tomato sauce mixture into the pan, bring the sauce to a simmer, and then reduce the heat to medium low. Add the olives and allow the sauce to simmer gently for about 15 minutes.
Add the shrimp and cook in the sauce for 5-6 minutes or until the shrimp are fully cooked through, stirring occasionally and flipping the shrimp about halfway through using tongs.
Serve each portion in a small casserole dish over white rice.
