Really good - touch of sweetness brought out by raisins. Rich seasoning. This will kick back for hours. Best to eat it for dinner or later!
1. Put olive oil in Dutch oven and heat to medium high. Add onions, chorizo, and garlic, stir to combine and cook until onions have started to soften, approximately 10 minutes.
2. Add the ground beef and allow it to brown, crumbling and stirring the meat with flat-edged wooden spoon. Season to taste with salt and pepper.
3. Add tomatoes, vinegar, cinnamon, cumin, bay leaves, cloves and nutmeg, and stir to combine. Lower the heat, and let the stew simmer, covered, for approximately 30 minutes.
4. Uncover, and add the raisins and olives. Allow the stew to cook for another 15 minutes or so, then serve over hot cooked brown rice.
It is OK to double recipe without worrying about making way too much
