What to do with left over sliced ham? "Light bulb goes on!" Ham salad, ... didn't have celery, ... so I went to the store and that's when it hit me.... squash! (And a few other things) :>)
Take approximately 1/8 inch thick sliced ham and dice into 1/8 inch cubes and put in large mixing bowl. Add finely chopped celery, white onion and green onion (cut into thin strips and slice thin) to bowl. Cut yellow squash and zucchini into thin slices, then into narrow stripes and pare into approximarely 1/8 inch cubes. Add to bowl. Grate boiled eggs into bowl. Add remaining ingredients and stir until just blended. Top with paprika. Refrigerate. Put on crackers or bread or whatever else you want. Delicious! Not only can he golf, he ain't no stranger to the kitchen either! I think my mama would approve. Hope you do too. Bon Appetite!
