Nice winter warmer
Heat oil in pan
Gently fry off the onion
Add garlic & chilli giving it a quick stir
Add ground cumin and ginger stir well to release flavour
Throw in carrots & butternut squash, pour in stock and bring to the boil
Cover and simmer gently for 10 minutes
Crack and gently dry fry the cumin seeds in another pan
Pour soup into a blender when veg is soft
Serve with cracked cumin seeds and coriander
