Basic cupcake recipe. Addition of flavours can be made.
Directions:
1. Add cream, vanilla and sugar until light and fluffy
2. Add eggs one at a time, beating well after each addition
3. Sift flour, salt and baking powder into the creamed mixture
4. Stir in milk and oil (at this point you can choose to add colour and flavour)
5. Place 12 paper patty cases in patty tins. Spoon mixture evenly into the paper cases.
6. Bake at 190 degree C for 15 minutes or until cakes spring back when lightly touched
7. Take out of the oven to cool.
8. After cooling cover with icing and decorations
• Flavours
Raspberry: Add a few drops of pink food colouring and raspberry flavouring
Cookies and Cream: Add a few crushed Oreo cookies into the mixture (without the cream)
Red Velvet: Add a few drops of red food colouring
Salted Ca¬¬¬ramel: Add a few drops of caramel food flavouring and a pinch of rock salt
Chocolate: Add ¼ cup cocoa powder
Chocolate, Nutella and Orange: Add ¼ cup cocoa powder, 4 teaspoons of Nutella and a few drops of orange flavouring
Chocolate, peanut butter: Add ¼ cup cocoa powder and mix 3 tablespoons of peanut butter into the milk before adding into the creamed mixture.
Mocha: Add 1 tablespoon of instant coffee into the milk before adding into the creamed mixture
• Buttercream Icing
Ingredients: 200gm Butter, softened
2 teaspoons vanilla extract (optional)
400 gm or 3 ½ cups of icing sugar
3-4 tablespoons of milk/cream (to reach right consistency)

2. Gradually add powdered sugar, beating well (at this point you can choose to add colour and flavour)
3. Beat in vanilla and enough cream or milk until desired spreading consistency

• Creamcheese Icing
Ingredients: 125gm Cream cheese, softened
2 teaspoons vanilla extract (optional)
150 gm or 1 ¼ cups of icing sugar
3-4 tablespoons of milk/cream (to reach right consistency)
