2. Once pressure release naturally, add butter to the hot rice and use a ladle to stir in the butter
3. Add milk and stir in rigorously until all the clumps in the rice are gone and the rice is nicely mashed
4. Finely dice ginger and green chillies, add this to the rice mixture. Add hing, salt and stir in rigorously
5. Add yogurt to the rice mixture and stir it in until well incorporated. Adjust yogurt and salt to taste. The yogurt rice should be a bit runny
6. In a small pan add oil and crackle mustard seeds and urad dal
7. Stir it into the rice
