My father used to make this salad, it was so good. I don't know where he got the recipe.
Cook rice according to directions - omitting butter. Remove from heat, turn into a medium sized bowl and allow to cool. Add green onions, olives and bell pepper to the rice. Drain artichoke hearts reserving the marinade. Add artichokes to rice mixture. Mix marinade with mayonnaise and curry powder, blending thoroughly with rice and chill 6-12 hours. Serve on lettuce leaf.
