Place chicken in medium bowl with 1 tsp curry powder, garlic salt and red pepper. Toss to coat.
Heat oil over med-high heat. Add chicken in one layer and cook 5-6 minutes. Turn occasionally. Remove and set aside.
Add broth and remaining curry powder. Bring to a boil, scraping up brown bits. Stir in vegetables and bring to a boil. Stir in couscous, top with chicken. Cover and remove from heat. Let stand 5 minutes until liquid is absorbed.
