An "easy" Indian recipe in that the curry does not use difficult to find ingredients. While it may not sound fantastic, the Mayonnaise, Evaporated Milk and Cheddar Cheese combine to form a rich curry base.
Simmer the whole chicken until it is easy to remove from the bone (~ one hour). When done, let cool and remove skin and bones. Stock can be frozen or used for another recipe.
Place the lightly steamed broccoli on the bottom of a covered casserole dish, followed by the chicken meat.
Mix all the other ingredients together and pour on top.
Cover and bake at 350 degrees until the liquids are bubbling merrily (about 35 - 45 minutes).
Serve over rice.
