1. Combine the broth, almond milk, vegetables, and curry powder in a medium pot and bring to a boil over high heat.
2. Once at a rolling boil, reduce the heat to low and cover the pot. Simmer until the cauliflower is tender but not mushy, about 15 minutes.
3. Take the pot off the heat and carefully transfer its contents to a blender. Blend on high until smooth and creamy. (Or use a handheld immersion blender to purée the soup right in the pot.) Taste for seasoning and adjust with salt and black pepper, if needed.
