This wonderful dish blends the awesomeness of curry and orange to make one bodacious side item.
Instructions
Melt butter in a saucepan; saute onion until soft and golden, but not brown. Stir in curry powder and rice; cook about 2 minutes longer, stirring constantly.
Add remaining ingredients; stir with fork. Bring to a boiling; lower heat to low and cover with a lid. Simmer on low for 20-30 minutes or until rice is tender and liquid has been absorbed. Remove bay leaf before serving. You can thank me later for probably the best rice dish ever made.
