1. Preheat oven to 475 degrees.
2. Arrange cauliflower on a jelly-roll pan. Combine olive oil and curry powder in a small bowl. Microwave at HIGH 30 seconds; pour over cauliflower, and toss well. Sprinkle with salt and pepper. Bake at 475 degrees for 13 minutes or until roasted.
3. While cauliflower roasts, combine yogurt and next 3 ingredients in a small bowl. Spoon sauce over roasted cauliflower; sprinkle with parsley.
