Unique taste for chicken salad. Curry adds a very nice (or hot if you like) flavor and goes very well with the apple, raisins and nuts.
Cook chicken breasts, water to cover with bay leaf, whole allspice, 1/4 onion - cut up, salt to taste (1/2 teasp.) Cool....mean time, blend mayo, curry, 1 t. water, let stand 5 min. Chop and put in apple, and chicken cut into small chunks, combine, then check for seasoning. If you need more mayo and curry, mix both in small bowl, plus a little water and add to salad. Put in raisins, pecans and chopped celery -
mix well and refrigerate to 1/2 hour to let flavors blend. Serve on romaine leaves or chopped lettuce.
