Whisk coconut milk, broth, curry paste in saucepan. Add ginger, garlic and place over medium heat until steaming.
Run noodles under water to loosen, then stir into pot.
Add greens, soy sauce, mint, cilantro and cook, stirring, for about 4 minutes or until noodles are tender and vegetables are tender crisp.
Add fish and cook for 4 minutes or until fish flakes. Ladle into bowls and serve.
