Canning -- relish
Combine all ingredients in a large kettle. Bring to a boil and simmer uncovered for 30 minutes, stirring occasionally. Pack into clean, hot jars, leaving 1/4" head space. Seal. Process in a boiling water bath for 10 minutes. Cool undisturbed for 12 hours. Store in a cool, dry place.
Makes 4-1/2 to 5 pints
