-peel the shallots, drizzle w/oil, wrap in foil
-ginger in single layer, drizzle w/oil, wrap in foil
-garlic cut tops off head so cloves are partially exposed, drizzle w/oil, wrap in foil
Bake for 15 minutes, remove ginger
Increase temp to 400 and bake 30 minutes
Soak chili’s in boiling water
Put everything in food processor-purée
