From Portland Culinary Workshop
In a large sauce pot, combine the ingredients for the sauce and paste together and let simmer for about 10 minutes.
Add the shrimp and let simmer for another 7-10 minutes.
Adjust seasoning to make sure it has enough salt.
Serve over steeped rice noodles (boil water over rice noodles in a large bowl). Let steep in plenty of water for about 10 minutes. Drain.
