1. Heat oven to 180C
2. Beat all ingredients for 3-5 mins until lightens in colour.
3. Pour into lines and greased 20cm square cake tin (or smaller).
4. Bake for 30-40min (brown all over, flat, skewer comes out clean).
5. While warm, coat with melted butter and sprinkle with cinnamon and sugar.
