preheat oven to 425. In a medium bowl beat eggs just enough to mix. Stir in sugar, salt, milk, vanilla and nutmeg. Pour into unbaked pie shell. Bake in preheated oven 10 minutes or until crust begins to brown. Reduce temperature to 350. Bake about 30 minutes more or until knife inserted near edge of filling comes out clean but center is still soft.
