1. Preheat oven to 180degC (conventional) or 160degC (fan forced). Place Flan Case on a baking tray.
2. Whisk together yolks, sugar and vanilla until well combined. Gradually whisk through cream. Pour into Flan Case, filling to the top of rim. Sprinkle with nutmeg.
3. Carefully place baking tray into oven. Bake for 25 minutes or until custard is just set.
4. Remove from oven and cool at room temperature
Garnish loosely with scattered raspberries and baby mint leaves.
