Add 12 tbsp of custard power to one cup milk
Add sugar to boiled milk
-Add sugar to boiled milk so that sugar will dissolve and it’s water component with leave.
-change temp from hi to low and
Stir custard with one hand and pour with other hand so it doesn’t clump, need to stir in custard little by little
-continue to stir on low heat
-taste test as you continue; if not sweet enough add small amounts of sugar if not sweet enough
-keep stirring until it boils. Then turn off temperature but keep stirring so the bottom of the pan doesn’t boil
Other notes: use deep pan that’s not steel or else it will burn the custard
For pralines:
Use two cups of sugar on high heat pan. Continue to Stir on high heat until it begins melting and becomes an even color
-once completely melted, almonds, turn off the heat and place on foil.
