This Namasu is essential for the New Year's celebration meal. the bright colour combination of white daikon and red carrot is particularly favoured by many Japanese, as it is regarded as a symbol of happiness.
Start preparation for this recipe the day before it is to be eaten.
NOTE: You will be leaving the finished dish develop it's flavour for at least a day.
1. Cut the daikon into three pieces, then thickly peel the skin. Peel the carrots and cut them into 2 in pieces. Slice both vegetables very thinly lengthways the crossways to make very thin matchsticks. (Alternatively, shed them with a grater or use a mandolin to achieve a similar effect).
2. Place the daikon and carrot in a mixing bowl. sprinkle with salt and mix well with your hands. Set aside for about 30 minutes.
3. Drain the vegetables in a sieve and gently squeeze out the excess liquid, then transfer them to another mixing bowl.
4. Mix the sugar and ric vinegar together in a bowl. Stir well until the sugar has completely dissolved. Pour over the daikon and carrot, and set aside for at least a day MIXING AT LEAST two or three times.
5. To serve, mix the two vegetables evenly and heap in the middle of a small bowl or plate. Sprinkle with sesame seeds, and serve.
This salad can be served with halved hard-boiled eggs, the yok seasoned with a little mayonnaise and shoyu, and accompanied by sticks of cucumber rolled in smoked salmon.
Offer a tine cup of warm sake along with this dish.
