Heat 1 tablespoon of oil in pan, add mushrooms and sauté til soft - 8 to 10 mins. Remove mushrooms and set aside.
Add remaining oil to pan , add onion and cook down for 8 mins. Add garlic and cashews and sauté for 2 mins.
Blend 1/3 cup of cooked mushrooms the cooked cashew mix, water, lemon zest and juice, salt, pepper, and purée til smooth.
Pour sauce back into pan, add remaining mushrooms, and stir well over med heat for several mins. Until combined and warm. Can store leftovers in glass jar in Fridge for up to 1 week.
