Super Yummy Chinese Street Food Dish
toast Sichuan peppercorns in a wok for about 30 seconds on medium heat
grind with mortar/pestle into a fine powder
Sauce - part to heat up and dissolve on low heat
3T soy sauce
1 1/2 tablespoon Sugar
dark Chinese vinegar
pout into bowl
Sauce- final:
Mix:
sesame paste
Sauce mixture from above
Sichuan pepper powder from above
chili oil
Pork mixture:
mince pork or use ground pork and marinade for 10m with the following ingredients:
salt
1/2t sugar
1/2t Chinese cooking wine (Shaoxing)
1/2t soy sauce
1/2 T corn starch
1/2t sesame oil
let sit 10m to marindade
Cook pork in wok:
add oil
on medium low:
add 3-10 dried chilis
cook until fragrant, about 1 minute
add 3T Yacai and fry off until wilted
on medium:
Fry pork marinade until browned. Mash down to small bits.
then add:
1/2T Shaoxing
1/2T Soy Sauce
move to bowl
Cook fresh noodles 3m or dried according to instructions
Assemble with sauce on the bottom, then noodles, then pork, then green onion and cashews on top
