Sautéed shrimp in a spicy cream sauce
Marinate the shrimp in 1 tablespoons of olive oil and old bay seasoning for at least 15 minutes or overnight.
Heat the oil in a non stick skillet and sauté the shrimp over medium heat until slightly browned, remove from the pan and retain the pan drippings if possible.
Cook the bacon until crispy and remove from the pan, retain the grease in a separate dish.
Melt the butter and sauté the garlic for 1 to 2 minutes over a medium heat. If it starts to turn brown, it's been in there too long.
Add the cream, bacon grease and all the remaining seasonings and simmer for 5 minutes.
Add the shrimp, bacon and any pan drippings that you were able to retain.
Simmer for 5 minutes over the lowest heat making sure to avoid over cooking.
Serve with warm french bread or linguini. Taut, zippy white wine contrasts tender shrimp while cutting its richness with crisp acidity. Pinot Grigio is great with Dani Girl Spicy Shrimp, which has both richness from butter and pungency from garlic and lemon juice. A resolutely dry Pinot Grigio will match the dish on both fronts.
