First of all you need to separate all six of the eggs. In a large bowl beat the egg yolks, then add the sugar, salt and milk. Sift together the flour, baking soda and baking powder. Add to the egg, sugar, salt and milk mixture and mix until well combined. Using a handmixer or a standing mixture beat the egg whites until stiff peaks form. Gently fold them into the pancake mixture. On the stovetop, heat your Ebleskiever pan which has had nonstick spray added to it. Place batter into each slot, and use a knitting needle to turn over. After all your little round pancakes are done, melt butter and add to ramekins. Then dip each in the melted butter and dunk in cinnamon sugar mixture! These are the most delicious little round pancakes you will ever eat! I make this breakfast on Christmas morning every year for my family and they look forward to it every year! This recipe has been doubled because my family will eat these all day!
