FC Loaf receipe
Preheat oven to 150c.
Cut dates in half and combine with bicarb soda, add boiling water. Leave to soak for 10 minutes.
Roughly chop pecans
In a bowl combine sugar, oil and egg and whisk until smooth
Add coffee and coffee grinds, whisk until combines
Add 1 cup of flour and whisk through
Add dates and water, mix in well. Add remaining flour and chopped pecans and ensure they are whisked in thoroughly
Spray a loaf pan with cooking spray and line with baking paper
Pour mix into the pan, decorate with additional pecans and bake on a lower shelf for 40 minutes, remove from oven and cover with foil and bake a further 30 minutes or until cooked though.
Allow to cool completely. Cut into 10 slices to serve. Garnish with dates ad pecans in the cabinet
Serve on a medium plate with a ramekin butter. toast slices if requested
Loaf has a shelf life of 72 hours
