1. Bring sugar and 1c of vinegar to a rolling boil. Once sugar is dissolved, turn off. 2. Process peppers, vinegar and mint. Add to sugar mixture. 3. Add Certo to mixture and stir. Pour into jars and shake occasionally so that mixture is settled throughout.
