Pasta with broccoli
1. small saucepan over high heat, bring stock to a boil. Add broccoli and cook until stalks are fork-tender - 8-10 mins.
2. Transfer stock and broccoli to a blender and add cheese and garlic. Pulse until combined. Adding one egg yolk at at time, pulse until combined. Adding one egg yolk at a time, pulse until mixture is lightly thickened. Season with sale and pepper. Transfer back to medium size sauce pan and bring to simmer.
3. cook pasta in large pot of salted water until just pliant - about 30 secs - then transfer immediately to the simmering sauce.
4. Finish cooking pastas in sauce over medium heat until pasta is al dente and sauce has thickened, about 3 mins. Should be creamy, not brothy. Serve with extra Parmesan.
